In a food processor or blender, combine the crumbled feta cheese, extra virgin olive oil, chopped fresh parsley, chopped fresh mint leaves, minced garlic, and red pepper flakes (if using).
Pulse until the ingredients are well combined and the mixture is relatively smooth. You can leave it a little chunky if you prefer.
Season with freshly ground black pepper to taste. Taste and adjust seasoning if needed. You likely won't need salt as feta is already salty.
Transfer the dip to a serving bowl. Drizzle with a little extra olive oil and sprinkle with a few more fresh herbs or red pepper flakes if desired.
Serve immediately with pita bread, crackers, or fresh vegetables.
Notes
This dip can be made ahead of time and stored in an airtight container in the refrigerator for up to 3 days. Let it come to room temperature for about 15 minutes before serving for the best flavor and texture.
