  • 200 grams Feta cheese crumbled
  • 120 ml Extra virgin olive oil
  • 30 grams Fresh parsley chopped
  • 15 grams Fresh mint leaves chopped
  • 1 clove Garlic minced
  • 0.5 teaspoon Red pepper flakes optional
  • 1 pinch Black pepper freshly ground

Preparation Steps

  • In a food processor or blender, combine the crumbled feta cheese, extra virgin olive oil, chopped fresh parsley, chopped fresh mint leaves, minced garlic, and red pepper flakes (if using).
  • Pulse until the ingredients are well combined and the mixture is relatively smooth. You can leave it a little chunky if you prefer.
  • Season with freshly ground black pepper to taste. Taste and adjust seasoning if needed. You likely won't need salt as feta is already salty.
  • Transfer the dip to a serving bowl. Drizzle with a little extra olive oil and sprinkle with a few more fresh herbs or red pepper flakes if desired.
  • Serve immediately with pita bread, crackers, or fresh vegetables.

Notes

This dip can be made ahead of time and stored in an airtight container in the refrigerator for up to 3 days. Let it come to room temperature for about 15 minutes before serving for the best flavor and texture.
