  • 19 ounces frozen cheese tortellini cooked according to package directions and drained
  • 2 cups rotisserie chicken shredded
  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 1 whole jalapeno pepper seeded and finely chopped
  • 3 cloves garlic minced
  • 14.5 ounces diced tomatoes drained
  • 2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • 0.5 teaspoon pepper
  • 2 cups heavy whipping cream
  • 0.25 cup parmesan shredded
  • 0.25 cup Romano cheese shredded
  • 0.33 cup fresh basil chopped

Preparation Steps

  • In a Dutch oven over medium heat, add olive oil.
  • Once oil is hot and sizzling, add onion and jalapeno and cook until onion is tender, about 5 minutes.
  • Add garlic and cook for 1 additional minute.
  • Add tomatoes, Italian seasoning, salt, and pepper. Cook and stir for about 2 minutes.
  • Stir in cream and bring to a boil.
  • Add cooked and drained tortellini, shredded rotisserie chicken, and cheeses; heat through.
  • Top with basil to serve.

Notes

This soup is perfect for a cozy dinner and can be adjusted with more spice if desired.
