In a medium bowl, toss the halved strawberries with granulated sugar and balsamic glaze. Spread them in a single layer on a baking sheet lined with parchment paper.
Roast the strawberries for 15-20 minutes, or until they are softened and slightly caramelized. Remove from oven and let cool slightly.
While the strawberries are roasting, prepare the whipped feta. In a food processor, combine the crumbled feta cheese, heavy cream, softened cream cheese, and olive oil.
Process until smooth and creamy. You may need to scrape down the sides of the food processor a few times. Season with black pepper.
To serve, spread the whipped feta onto a serving platter or in a shallow bowl. Spoon the roasted strawberries and their juices over the top.
Garnish with fresh mint leaves and chopped pistachios, if desired. Serve immediately with crackers, bread, or fruit.
