Combine frozen watermelon chunks, lime juice, and honey in a food processor or high-powered blender.
Process until smooth and creamy. If the mixture is too thick, add a tablespoon of water or more lime juice at a time until desired consistency is reached.
Serve immediately for a soft-serve consistency, or transfer to an airtight container and freeze for at least 2 hours for a firmer sorbet.

Garnish with a sprig of mint or a slice of lime if desired.
