Pizza Base

  • 1 large sweet potato peeled and cooked until tender
  • 0.5 cup almond flour
  • 1 large egg
  • 0.25 teaspoon salt

Toppings

  • 0.5 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 0.5 cup sliced mushrooms
  • 0.5 cup sliced bell peppers

Preparation Steps

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a bowl, mash the cooked sweet potato until smooth. Add almond flour, egg, and salt. Mix until well combined.

  • Spread the sweet potato mixture onto the prepared baking sheet to form a pizza crust, about 0.5 inch thick.
  • Bake the crust for 15 minutes, or until lightly golden.
  • Remove the crust from the oven and spread with tomato sauce. Top with mozzarella cheese, mushrooms, and bell peppers.

  • Bake for another 10-15 minutes, or until the cheese is melted and bubbly.
  • Slice and serve hot.
