  • 5 oz fresh spinach
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries hulled and sliced
  • 0.5 cup fresh raspberries
  • 0.25 cup feta cheese crumbled
  • 0.25 cup pecans chopped and toasted

Balsamic Vinaigrette

  • 0.33 cup olive oil
  • 3 tbsp balsamic vinegar
  • 1 tsp honey
  • 0.5 tsp dijon mustard
  • 1 pinch salt
  • 1 pinch black pepper

Preparation Steps

  • In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined. Set aside.
  • In a large salad bowl, combine the fresh spinach, blueberries, sliced strawberries, raspberries, crumbled feta cheese, and toasted pecans.
  • Drizzle the balsamic vinaigrette over the salad and gently toss to coat all ingredients.
  • Serve immediately and enjoy!

Notes

This salad is best served fresh. You can substitute other nuts like walnuts or almonds. For a sweeter salad, add a touch more honey to the dressing.
