  • 0.5 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground nutmeg
  • 0.25 cup molasses

Preparation Steps

  • In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the molasses.
  • Cover the dough and refrigerate for at least 2 hours, or until firm.
  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets.
  • Bake for 8-10 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

Decorate with royal icing once cooled for a festive touch!
