  • 0.33 cup maple syrup
  • 0.25 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 0.5 cup chocolate chips optional

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease or line a 12-cup muffin tin.
  • In a medium bowl, combine the rolled oats, peanut butter, maple syrup, melted coconut oil, vanilla extract, and salt.
  • Mix until well combined.
  • If using, stir in the chocolate chips.
  • Spoon the mixture evenly into the prepared muffin cups, pressing down gently to form the cups.
  • Bake for 15-18 minutes, or until the edges are lightly golden and set.
  • Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
  • Store in an airtight container in the refrigerator.

Notes

These peanut butter oat cups are best enjoyed chilled. You can customize them with other add-ins like chopped nuts or dried fruit.
