  • 0.25 cup crumbled feta cheese

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper

Preparation Steps

  • In a large bowl, gently combine the cubed watermelon, sliced peaches, and thinly sliced red onion.
  • In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper until well combined. This is your dressing.
  • Pour the dressing over the watermelon and peach mixture. Gently toss to coat.
  • Add the chopped fresh mint leaves and crumbled feta cheese. Toss lightly once more.
  • Serve immediately or chill for about 15 minutes before serving for an even more refreshing taste.

This salad is best enjoyed fresh. For best results, use ripe, sweet peaches and a flavorful watermelon.
