  • 2 cups mixed nuts such as almonds, walnuts, cashews
  • 1 cup rolled oats
  • 0.5 cup unsweetened shredded coconut
  • 0.25 cup honey
  • 0.25 cup almond butter
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon salt

Preparation Steps

  • Preheat oven to 325°F (160°C). Line an 8x8 inch baking pan with parchment paper.
  • In a food processor, pulse the mixed nuts until coarsely chopped.
  • In a large bowl, combine the chopped nuts, rolled oats, shredded coconut, honey, almond butter, vanilla extract, cinnamon, and salt. Mix well until everything is evenly combined.
  • Press the mixture evenly into the prepared baking pan. Ensure it's packed firmly.
  • Bake for 20 minutes, or until the edges are lightly golden brown.
  • Let the bars cool completely in the pan before cutting into 12 bars.

Store in an airtight container at room temperature for up to 5 days.
