  • 1 lb Ground beef
  • 1 cup Chopped onion
  • 1 cup Chopped green bell pepper
  • 1 can (15 ounces) Black beans drained and rinsed
  • 1 can (15 ounces) Corn drained
  • 2 cups Lasagna noodles
  • 2 cups Enchilada sauce
  • 2 cups Shredded cheddar cheese

Preparation Steps

  • Brown ground beef in a large skillet. Drain excess grease.
  • Add onion and bell pepper; cook until softened.
  • Stir in black beans, corn, and enchilada sauce. Season with salt and pepper to taste.
  • Spread a thin layer of sauce in the bottom of a 9x13 inch baking dish.
  • Layer lasagna noodles, beef mixture, and cheese. Repeat layers.
  • Bake at 375°F (190°C) for 30-40 minutes, or until bubbly and heated through.
