- 1 lb Ground beef
- 1 cup Chopped onion
- 1 cup Chopped green bell pepper
- 1 can (15 ounces) Black beans drained and rinsed
- 1 can (15 ounces) Corn drained
- 2 cups Lasagna noodles
- 2 cups Enchilada sauce
- 2 cups Shredded cheddar cheese
Preparation Steps
Brown ground beef in a large skillet. Drain excess grease.
Add onion and bell pepper; cook until softened.
Stir in black beans, corn, and enchilada sauce. Season with salt and pepper to taste.
Spread a thin layer of sauce in the bottom of a 9x13 inch baking dish.
Layer lasagna noodles, beef mixture, and cheese. Repeat layers.
