  • 1.5 pound boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 pound potato gnocchi store-bought or homemade
  • 0.5 cup chicken broth
  • 0.5 cup heavy cream
  • 0.33 cup grated Parmesan cheese
  • 0.25 cup fresh parsley chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Pat the chicken dry and season with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  • Add minced garlic to the skillet and cook for 30 seconds until fragrant, being careful not to burn it.
  • Add the gnocchi to the skillet and cook, stirring occasionally, until lightly browned, about 3-5 minutes.
  • Pour in the chicken broth and heavy cream. Bring to a simmer and cook until the sauce has thickened slightly, about 3-5 minutes.
  • Stir in the grated Parmesan cheese and lemon juice. Cook until the cheese is melted and the sauce is smooth.
  • Return the cooked chicken to the skillet. Toss to coat in the sauce.
  • Stir in the chopped fresh parsley. Season with additional salt and pepper to taste.
  • Serve hot.

Notes

This recipe is easily customizable. Feel free to add your favorite vegetables like spinach or broccoli.
