Preparation Steps
Preheat your oven to 400°F (200°C). Lightly grease a baking sheet.
In a medium bowl, combine the softened cream cheese, diced jalapenos, shredded cheddar cheese, shredded Monterey Jack cheese, garlic powder, onion powder, salt, and black pepper. Mix well until everything is thoroughly combined.
Add the cubed chicken to the cream cheese mixture. Stir until the chicken is evenly coated.
In a separate shallow dish, combine the panko breadcrumbs and melted butter. Stir to coat the breadcrumbs.
Roll each piece of coated chicken into a ball and then roll it in the buttered panko breadcrumbs, ensuring it's well coated.
Place the coated chicken balls onto the prepared baking sheet.
Bake for 20-25 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown and crispy.
Let cool slightly before serving.
