Zucchini Bars

  • 2.5 cups grated zucchini ends trimmed, not peeled
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Cream Cheese Frosting

  • 8 ounces cream cheese softened
  • 0.5 cup unsalted butter softened
  • 2 cups powdered sugar sifted
  • 1 teaspoon vanilla extract

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  • In a separate bowl, beat together the granulated sugar, vegetable oil, eggs, and vanilla extract until well combined.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  • Stir in the grated zucchini.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bars cool completely in the pan on a wire rack.
  • While the bars are cooling, prepare the frosting. In a medium bowl, beat the softened cream cheese and butter until smooth and creamy.
  • Gradually add the sifted powdered sugar and vanilla extract, beating until well combined and smooth. Add a tablespoon of milk if the frosting is too thick.
  • Once the zucchini bars are completely cooled, spread the cream cheese frosting evenly over the top.
  • Cut into bars and serve.

Notes

For best results, squeeze out any excess moisture from the grated zucchini before adding it to the batter. Store leftover bars in an airtight container in the refrigerator.
