Instructions
Preparation Steps
Brown ground beef in a large skillet. Drain excess fat.
Add onion, chili powder, and cumin to the beef and cook until softened.
Spread a thin layer of enchilada sauce in the bottom of a 9x13 inch baking dish.
Layer half of the corn tortillas in the baking dish, then top with half of the beef mixture and half of the cheese.
Repeat layers with remaining tortillas, beef mixture, and cheese.
Pour remaining enchilada sauce over the top.
Bake at 350°F (175°C) for 25-30 minutes, or until heated through and cheese is melted and bubbly.
Notes
Serve hot and enjoy! Can be topped with sour cream, avocado, or your favorite toppings.
