A cheesy, comforting enchilada casserole perfect for a weeknight meal or a casual gathering. Layers of corn tortillas, seasoned ground beef, and enchilada sauce are topped with melted cheese.

  • 1 lb Ground beef
  • 1 cup Chopped onion
  • 1 tsp Chili powder
  • 0.5 tsp Cumin
  • 15 oz Enchilada sauce
  • 12 count Corn tortillas
  • 2 cups Shredded cheddar cheese

Preparation Steps

  • Brown ground beef in a large skillet. Drain excess fat.
  • Add onion, chili powder, and cumin to the beef and cook until softened.
  • Spread a thin layer of enchilada sauce in the bottom of a 9x13 inch baking dish.
  • Layer half of the corn tortillas in the baking dish, then top with half of the beef mixture and half of the cheese.
  • Repeat layers with remaining tortillas, beef mixture, and cheese.
  • Pour remaining enchilada sauce over the top.
  • Bake at 350°F (175°C) for 25-30 minutes, or until heated through and cheese is melted and bubbly.

Notes

Serve hot and enjoy! Can be topped with sour cream, avocado, or your favorite toppings.
