Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
In a skillet, cook the breakfast sausage until browned. Drain off any excess grease.

In a separate bowl, whisk together the eggs, shredded cheese, salt, and cayenne pepper (if using).

Bake for 30-40 minutes, or until the eggs are set and the casserole is golden brown.
While the casserole is baking, prepare the Hollandaise sauce: In a small saucepan over low heat, whisk together the egg yolks, lemon juice, and melted butter until thickened and smooth. Stir in salt and cayenne pepper.

Let the casserole rest for 5 minutes before serving. Drizzle with Hollandaise sauce.

This casserole is best served hot. You can make it ahead of time and reheat it in the oven.
