  • 1 lb boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 0.5 tsp ground cumin
  • 0.75 tsp salt
  • 0.25 tsp black pepper
  • 4 pitas pita breads
  • 1 cup tzatziki sauce store-bought or homemade
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 0.5 cup red onion, thinly sliced
  • 0.5 cup cucumber, sliced

Preparation Steps

  • In a bowl, whisk olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Add chicken and toss to coat. Marinate for 15 minutes.
  • Grill or pan-sear the chicken until cooked through and juices run clear, about 6-8 minutes per side. Slice thin.
  • Warm the pita breads in a dry skillet or oven.
  • Spread tzatziki on pita, layer chicken, lettuce, tomatoes, onion, and cucumber. Roll to form gyro.

Notes

Tip: For a faster version, use pre-cooked chicken and store-bought tzatziki.
