Instructions
Preparation Steps
Preheat oven to 400°F (200°C). Cut spaghetti squash in half lengthwise and remove seeds.
Place cut-side down on a baking sheet and bake for 40-45 minutes, or until tender.
While squash is baking, sauté garlic in olive oil until fragrant. Add spinach and cook until wilted.
Once squash is cooked, let it cool slightly. Scrape out the flesh with a fork.
Mix cooked spaghetti squash, spinach mixture, mozzarella cheese, salt, and pepper.
Serve immediately.
Notes
For extra flavor, add a pinch of red pepper flakes.
