  • 1 medium spaghetti squash
  • 10 ounces fresh spinach
  • 2 cloves garlic minced
  • 1 cup shredded mozzarella cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Preheat oven to 400°F (200°C). Cut spaghetti squash in half lengthwise and remove seeds.
  • Place cut-side down on a baking sheet and bake for 40-45 minutes, or until tender.
  • While squash is baking, sauté garlic in olive oil until fragrant. Add spinach and cook until wilted.
  • Once squash is cooked, let it cool slightly. Scrape out the flesh with a fork.
  • Mix cooked spaghetti squash, spinach mixture, mozzarella cheese, salt, and pepper.
  • Serve immediately.

Notes

For extra flavor, add a pinch of red pepper flakes.
