Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
In a large bowl, whisk together flour, baking soda, and cinnamon.
In a separate bowl, combine sugar, eggs, and oil. Beat until well combined.
Add the wet ingredients to the dry ingredients and mix until just combined. Stir in the carrots.
Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
This recipe can be easily adapted to your liking. You can add nuts, raisins, or other spices to the batter.
