Preparation Steps

  • Cook elbow macaroni according to package directions until al dente. Drain and rinse with cold water.
  • In a large bowl, whisk together mayonnaise, sour cream, Cajun seasoning, Dijon mustard, salt, and pepper.
  • Add the drained macaroni, chopped celery, red onion, green bell pepper, and parsley to the bowl with the dressing.
  • Stir gently to combine all ingredients. Ensure the macaroni is well coated with the dressing.
  • Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

This salad is best served chilled. You can add other vegetables like diced pickles or corn for extra flavor and texture.
