In a large skillet or pot, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon grease in the skillet.
Add the chopped onion to the skillet with the bacon grease and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
Add the thinly sliced cabbage to the skillet. Stir to combine with the onions and garlic. Cover and cook for 8-10 minutes, or until the cabbage has wilted and is tender-crisp.
Stir in the butter until melted. Season with salt and black pepper to taste. Stir in the cooked bacon.
Serve hot as a side dish.

For a heartier meal, you can add some cooked sausage or a poached egg on top.
