Add the apple cider, brown sugar, cinnamon stick, ginger, and nutmeg into a small saucepan. Cook over medium heat, stirring until the sugars dissolve completely.
Once dissolved, add the fresh cranberries and increase heat until the mixture boils.
Reduce to a simmer and cook for about 10 minutes, or until most cranberries have popped and the sauce thickens.
Remove from heat and let the sauce cool before using.
Baked Brie
Preheat oven to 350°F (175°C).
Place the brie wheel in a shallow baking dish. Make a few small slits in the top rind to allow the cheese to melt evenly.
Top the brie generously with the prepared cranberry sauce.
Bake in the preheated oven for 15 minutes, or until the brie is soft and slightly runny in the center.
