Dip each zucchini stick first into the flour, shaking off any excess. Then, dip it into the beaten eggs, letting any excess drip off. Finally, coat it thoroughly with the panko mixture, pressing gently to help it adhere.
Preheat your air fryer to 400°F (200°C).
Arrange the coated zucchini fries in a single layer in the air fryer basket, ensuring they don't overlap. You may need to cook in batches.
Lightly spray the zucchini fries with olive oil.

Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
