  • 0.5 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil for spraying

  • Wash and trim the ends of the zucchini. Cut each zucchini into 3-inch long sticks, about 0.5 inch thick.
  • Set up three shallow dishes. In the first dish, place the flour. In the second dish, whisk the eggs. In the third dish, combine the panko breadcrumbs, garlic powder, salt, and pepper.
  • Dip each zucchini stick first into the flour, shaking off any excess. Then, dip it into the beaten eggs, letting any excess drip off. Finally, coat it thoroughly with the panko mixture, pressing gently to help it adhere.
  • Preheat your air fryer to 400°F (200°C).
  • Arrange the coated zucchini fries in a single layer in the air fryer basket, ensuring they don't overlap. You may need to cook in batches.
  • Lightly spray the zucchini fries with olive oil.

  • Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  • Serve immediately with your favorite dipping sauce.

Notes

These zucchini fries are best enjoyed fresh. For a gluten-free option, use gluten-free flour and breadcrumbs.
