  • 1 cup unsalted butter, softened
  • 0.75 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 cup pistachios, shelled and roughly chopped
  • 6 ounces semisweet chocolate
  • 0.5 cup heavy cream

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • Cream together butter and sugar until light and fluffy. Beat in eggs one at a time.
  • In a separate bowl, whisk together flour and pistachios. Gradually add to the wet ingredients, mixing until just combined.
  • Press half of the dough into the prepared pan. Bake for 15 minutes.
  • Meanwhile, chop the chocolate and heat the heavy cream in a small saucepan until it simmers. Pour over the chocolate and stir until smooth.
  • Spread the chocolate ganache over the partially baked crust. Top with the remaining dough. Bake for another 10 minutes, or until golden brown.
  • Let cool completely before cutting into bars.

Notes

Store leftover bars in an airtight container at room temperature for up to 3 days.
